Avocado Recipes That Go Way Beyond Guacamole
Avocados are creamy, buttery, and slightly nutty, making them ideal for countless dishes — and those grown in California are now in season! Once reserved for royalty, avocados are now enjoyed by countless people around the world. Here is a short roundup of some of my out of the box avocado recipes.
COOK
PRESERVE
Avocados can be safely preserved by freezing, but when frozen, whole or sliced avocados do not maintain the best quality. Instead, freeze avocados as a puree and add one tablespoon of lemon juice for every two avocados, or 1/4 teaspoon ascorbic acid for every quart of puree. Leave headspace while packing the container. Seal, date, and freeze at 0 degrees Fahrenheit. Use within 12 months. There are no research-tested recipes for canning avocados at this time.
STORE
Avocados should be stored on the counter where they can ripen properly at room temperature. Don't store avocados in a paper bag, which would trap the natural ethylene gas from the avocado and actually speed up the ripening process.
